  • 1 pound ground breakfast sausage (hot or mild)
  • 8 ounces cream cheese, softened
  • 1 can Rotel tomatoes, drained
  • 2 cups shredded cheddar cheese
  • 1 ½ cups Bisquick or all-purpose baking mix
  • Optional spices: garlic powder, paprika, cayenne

Instructions

  1. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine 1 pound of breakfast sausage and 8 ounces of softened cream cheese. Mix until well combined.
  3. Drain one can of Rotel tomatoes and stir them into the sausage mixture. Add 2 cups of shredded cheddar cheese and mix thoroughly.
  4. Gradually add 1 ½ cups of Bisquick or all-purpose baking mix to the bowl. Mix until the dough holds together but isn’t overly sticky. Add more baking mix one tablespoon at a time if needed.
  5. Using a small scoop or spoon, portion out the mixture and roll into balls about 1-inch in diameter. Place them evenly spaced on the prepared baking sheet.
  6. Bake for 20-25 minutes, or until golden brown and cooked through. Rotate the pan halfway through for even cooking.
  7. Remove the sausage balls from the oven and let them cool for 5 minutes before serving.
