  • 6 tablespoons unsalted butter, melted
  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon
  • 16 ounces cream cheese, softened
  • ½ cup granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon pure vanilla extract
  • ½ cup sour cream
  • 34 medium apples, peeled, cored, and thinly sliced (Granny Smith or Honeycrisp recommended)
  • ½ cup brown sugar
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 2 tablespoons unsalted butter
  • 1 cup granulated sugar
  • 6 tablespoons unsalted butter, cut into cubes
  • ½ cup heavy cream
  • 1 teaspoon sea salt flakes

Instructions

  1. Preheat your oven to 325°F (163°C). In a medium bowl, mix the graham cracker crumbs, melted butter, sugar, and cinnamon until well combined. Press the mixture evenly into the bottom of a 9-inch springform pan. Bake for 8 minutes, then set aside to cool.
  2. In a skillet over medium heat, melt the butter. Add the sliced apples, brown sugar, cinnamon, and nutmeg. Cook for 5-7 minutes, stirring occasionally, until the apples are soft and caramelized. Remove from heat and allow to cool.
  3. In a large mixing bowl, beat the cream cheese and sugar together until smooth (about 2 minutes). Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and sour cream until fully combined.
  4. Pour the cheesecake filling over the cooled crust and spread it evenly. Arrange the cooked apples on top in a decorative pattern.
  5. Place the springform pan in a water bath and bake for 50-60 minutes, or until the edges are set and the center is slightly jiggly. Remove from the oven and let cool completely on a wire rack before refrigerating for at least 4 hours, preferably overnight.
  6. In a saucepan over medium heat, melt the sugar, stirring constantly until it turns a deep amber color. Add the butter and stir until melted. Slowly pour in the heavy cream while whisking. Remove from heat and stir in the sea salt. Let cool slightly.
  7. Drizzle the salted caramel sauce generously over the chilled cheesecake. Slice and serve!
