Irresistible Shrimp and Spinach Tortellini Recipe for Perfect Weeknight Meals

Tender shrimp tossed with spinach-stuffed tortellini, coated in a creamy garlic sauce. A quick and easy meal perfect for busy weeknights or a delightful weekend treat.

  • 1 package fresh or frozen spinach-and-cheese tortellini
  • 1 pound medium-sized shrimp, peeled and deveined
  • 2 cups fresh baby spinach
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup freshly grated Parmesan cheese
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • Salt and black pepper, to taste
  • Red pepper flakes, optional

Instructions

  1. Bring a large pot of salted water to a boil. Add the spinach tortellini and cook according to the package instructions (usually 3-5 minutes for fresh tortellini, 8-10 minutes for frozen). Drain and set aside.
  2. While the tortellini cooks, season the shrimp with a pinch of salt, black pepper, and red pepper flakes (if using).
  3. Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the shrimp in a single layer and cook for 2-3 minutes on each side, or until pink and fully cooked. Remove the shrimp from the skillet and set aside.
  4. In the same skillet, reduce the heat to low and add 2 tablespoons of butter. Once melted, add 3 cloves of minced garlic and sauté for about 1 minute, until fragrant (be careful not to burn the garlic).
  5. Pour in 1 cup of chicken broth and 1 cup of heavy cream. Stir well and let it simmer gently for 3-4 minutes, allowing the sauce to thicken slightly.
  6. Gradually stir in 1 cup of freshly grated Parmesan cheese until fully melted and the sauce is smooth and creamy.
  7. Add the cooked tortellini, shrimp, and 2 cups of fresh spinach to the skillet. Toss gently to coat everything in the sauce, letting the spinach wilt slightly.
  8. Cook for another 2-3 minutes, stirring occasionally, until everything is heated through. Taste and adjust seasoning with more salt or pepper if needed.
  9. Serve immediately while warm, garnished with extra Parmesan cheese and a sprinkle of fresh parsley, if desired.
