  • 24 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, packed in oil, drained and chopped
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup freshly grated Parmesan cheese
  • 2 cups fresh spinach leaves
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Place chicken breasts between two sheets of plastic wrap and gently pound them to an even thickness (about ½ inch) using a meat mallet or rolling pin.
  2. Season both sides of the chicken with salt, pepper, and a sprinkle of Italian seasoning.
  3. Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Once hot, add the chicken breasts and sear for 4-5 minutes per side until golden brown and cooked through. Remove from the skillet and set aside.
  4. Lower the heat to medium and add 2 tablespoons of butter to the skillet. Once melted, stir in the minced garlic and cook for 1 minute until fragrant.
  5. Add the sun-dried tomatoes to the skillet and cook for another 1-2 minutes.
  6. Pour in the chicken broth and scrape the bottom of the skillet with a wooden spoon to deglaze it.
  7. Slowly stir in the heavy cream, ensuring it’s fully combined with the broth and tomato mixture. Add the grated Parmesan cheese and whisk until the sauce becomes smooth and creamy. Taste and adjust seasoning if needed.
  8. Reduce heat to low and add the fresh spinach to the sauce. Stir gently until the spinach wilts and is fully incorporated.
  9. Return the seared chicken to the skillet, nestling it into the creamy sauce. Spoon some sauce over the chicken and let it simmer for 3-5 minutes.
  10. Serve hot, garnished with freshly chopped parsley or extra Parmesan cheese if desired.
