  • 1 pound (450g) ground turkey
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 small onion, diced
  • 1 cup (150g) diced bell peppers
  • 1 medium zucchini, diced
  • 2 cups (300g) halved cherry tomatoes
  • 2 tablespoons tomato paste
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Fresh basil, chopped (optional)
  • Grated Parmesan cheese (optional)

Instructions

  1. Heat 1 tablespoon of olive oil in a large skillet over medium heat.
  2. Add 1 pound (450g) of ground turkey to the skillet. Use a spatula to break the meat into small crumbles as it cooks. Season with 1/2 teaspoon salt and 1/4 teaspoon black pepper. Cook for about 5-7 minutes, or until the turkey is browned and cooked through. Remove the turkey from the skillet and set aside.
  3. In the same skillet, add another 1 tablespoon of olive oil. Toss in 1 small onion, diced, and sauté until softened, about 3 minutes. Add 2 cloves of garlic, minced, and cook for another 1 minute until fragrant.
  4. Add 1 cup (150g) of diced bell peppers and 1 medium zucchini, diced. Stir and cook for about 5-6 minutes, until the veggies are tender but still have a slight crunch.
  5. Add 2 cups (300g) of halved cherry tomatoes, followed by 2 tablespoons of tomato paste. Stir to combine, allowing the tomatoes to soften and release their juices.
  6. Pour in 2 tablespoons of balsamic vinegar and sprinkle 1 teaspoon of Italian seasoning. Stir well and bring the mixture to a simmer for about 3-5 minutes.
  7. Return the cooked ground turkey to the skillet and mix it into the sauce and vegetables. Let everything cook together for another 5 minutes to meld the flavors.
  8. Remove the skillet from the heat and garnish with freshly chopped basil and a sprinkle of grated Parmesan cheese (if using). Serve warm and enjoy!
