  • 2 fresh jalapeños, diced
  • 6 slices bacon, cooked and crumbled
  • 8 ounces full-fat cream cheese
  • 1 cup shredded sharp cheddar cheese
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 2 cloves garlic, minced
  • 1 medium onion, diced
  • Salt and pepper to taste
  • Optional toppings: green onions, extra cheese, tortilla strips

Instructions

  1. Cook the bacon in a skillet until crispy. Remove and set aside on a paper towel-lined plate.
  2. In the same pot, sauté diced onion and jalapeños until softened and fragrant (about 5 minutes).
  3. Stir in minced garlic and cook for 1 minute, being careful not to burn it.
  4. Pour in the chicken broth and bring it to a gentle simmer.
  5. Reduce heat to low and whisk in the cream cheese until fully melted and smooth.
  6. Add the cooked, shredded chicken to the pot and stir to combine.
  7. Stir in heavy cream and shredded cheddar cheese, allowing the soup to thicken and become creamy.
  8. Taste and adjust with salt and pepper as needed.

Notes
