This cozy lasagna soup brings all the classic flavors of lasagna into a hearty, one-pot meal. It’s quick, easy, and perfect for busy weeknights or family gatherings, with a rich tomato broth, tender noodles, and a melty cheese topping.

Ingredients

Scale
  • 2 tablespoons olive oil
  • 1 medium yellow onion, diced (about 1 cup)
  • 4 garlic cloves, minced
  • 8 oz mild or spicy Italian sausage, casings removed
  • 8 oz lean ground beef (90% lean preferred)
  • 1 medium carrot, diced (about 1/2 cup)
  • 1 celery stalk, diced (about 1/4 cup)
  • 1 can (28 oz) crushed tomatoes
  • 2 tablespoons tomato paste
  • 5 cups low-sodium chicken or vegetable broth
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon Italian seasoning (or mix of dried basil, oregano, and thyme)
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • 1 bay leaf (optional)
  • 1 teaspoon kosher salt, plus more to taste
  • 1/2 teaspoon black pepper, plus more to taste
  • 8 oz lasagna noodles, broken into pieces (about 810 noodles, or substitute short pasta)
  • 1 cup whole milk ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup freshly grated Parmesan cheese
  • Fresh basil or parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large Dutch oven over medium heat. Add diced onion, carrot, and celery; cook until softened, 5-6 minutes. Add minced garlic and cook until fragrant, about 1 minute.
  2. Add Italian sausage and ground beef. Break up the meat as it browns, about 5-7 minutes, until no longer pink. Spoon off excess fat if needed.
  3. Stir in tomato paste and cook for 2 minutes. Add Italian seasoning, red pepper flakes, bay leaf, salt, and pepper. Stir well.
  4. Add crushed tomatoes and broth. Scrape the bottom of the pot to loosen browned bits. Bring to a gentle boil.
  5. Reduce heat to a simmer, cover, and cook for 10 minutes, stirring occasionally. Add broken lasagna noodles, stir, and simmer uncovered for 12-15 minutes, until pasta is al dente. Stir every few minutes to prevent sticking.
  6. Remove bay leaf. Stir in balsamic vinegar and adjust seasoning with more salt and pepper if needed. Add extra broth if soup is too thick.
  7. In a small bowl, mix ricotta, mozzarella, and Parmesan cheese.
  8. Ladle soup into bowls. Top each with a generous scoop of the cheese mixture and garnish with fresh basil or parsley.

Notes

For gluten-free, use gluten-free pasta. For vegetarian, omit meat and use extra veggies and lentils. For dairy-free, use almond ricotta and vegan mozzarella. Stir pasta often to prevent sticking. Add more broth if soup thickens upon standing. Soup can be made ahead and tastes even better the next day.
