  • 4 medium zucchinis, spiralized into noodles
  • 4 cloves garlic, minced

  • Juice and zest of 1 medium lemon
  • 1/4 cup white wine or chicken broth
  • 1/4 teaspoon red pepper flakes (optional)
  • 2 tablespoons fresh parsley, chopped
  • Salt and black pepper to taste

Instructions

  1. Prepare the zucchini noodles using a spiralizer. Place noodles in a large bowl, sprinkle with a pinch of salt, and toss gently. Let sit for 10 minutes to draw out moisture. Squeeze noodles with a clean towel to remove excess water.
  2. Heat 1 tablespoon olive oil and 1 tablespoon butter in a large skillet over medium-high heat. Add shrimp in a single layer, season with salt and pepper, and cook about 2 minutes per side until pink and opaque. Remove shrimp and set aside.
  3. Lower heat to medium. Add remaining butter and olive oil to skillet. Add minced garlic and red pepper flakes (if using), sauté about 1 minute until fragrant but not browned.
  4. Pour in white wine or chicken broth to deglaze the pan, scraping browned bits with a wooden spoon. Simmer 2-3 minutes to reduce slightly.
  5. Stir in lemon zest and juice, then add chopped parsley. Adjust salt and pepper to taste.
  6. Return shrimp to the pan, gently toss in zucchini noodles. Cook 2-3 minutes until noodles are warmed but still slightly crisp. Avoid overcooking.
  7. Serve immediately, spooning extra sauce over the top. Add a lemon wedge if desired.

Salt and drain zucchini noodles to prevent sogginess. Cook shrimp just until opaque to avoid rubberiness. Deglaze pan with white wine or broth for flavor depth. Add zucchini noodles last to keep them crisp. Reheat leftovers gently in a skillet, avoid microwaving.
