Instructions

  1. Preheat the oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. In a large bowl, beat 1 cup softened unsalted butter with 1 cup granulated sugar using an electric mixer on medium speed for 3-4 minutes until pale and fluffy.
  3. Beat in 1 large room-temperature egg, 1 teaspoon vanilla extract, and ½ teaspoon peppermint extract until combined.
  4. In a separate bowl, whisk together 2 cups all-purpose flour, 1 teaspoon baking soda, and ½ teaspoon salt. Gradually add to wet ingredients, mixing on low speed until dough is soft and slightly sticky.
  5. Fold in 1 cup semi-sweet chocolate chips evenly.
  6. Scoop dough with a tablespoon or cookie scoop onto prepared baking sheets, spacing about 2 inches apart. Lightly flatten each ball.
