  • 1/2 cup (120 ml) sourdough starter discard (100% hydration)
  • 1 3/4 cups (220 g) all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/3 cup (75 g) butter, melted and slightly cooled
  • 1/2 cup (100 g) packed brown sugar
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 3/4 cup (130 g) semi-sweet or dark chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease your 9×5 inch loaf pan or line it with parchment paper.
  2. Mash the bananas in a large bowl using a fork or potato masher until mostly smooth with a few small lumps remaining (about 2-3 minutes).
  3. Add the melted butter to the mashed bananas and stir to combine.
  4. Mix in the brown sugar, egg, vanilla extract, and sourdough discard until the batter looks smooth and slightly glossy (about 2 minutes).
  5. In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.
  6. Gently fold the dry ingredients into the wet banana mixture until just combined, avoiding overmixing.
  7. Fold in the chocolate chips evenly throughout the batter.
  8. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  9. Bake for 50-60 minutes, or until a toothpick inserted near the center comes out clean or with a few moist crumbs. The top should be golden brown and spring back lightly when touched.
  10. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

Do not overmix the batter once the flour is added to keep the bread tender. Use a kitchen scale for accurate flour measurement. If batter is too thick or dry, add a splash of milk or water.
