One-Pot Lasagna Soup

This cozy one-pot lasagna soup combines the comforting flavors of traditional lasagna into a quick and easy soup, perfect for chilly nights.

  • 1 pound ground beef or Italian sausage
  • 1 onion, chopped
  • 4 garlic cloves, minced
  • 28 ounces crushed tomatoes
  • 4 cups chicken or beef broth
  • 8 ounces lasagna noodles, broken into smaller pieces
  • 1 tablespoon Italian seasoning
  • Salt and pepper to taste
  • 1/2 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • Fresh parsley or basil for garnish (optional)

Instructions

  1. Heat a large pot or Dutch oven over medium heat. Add 1 tablespoon of olive oil, followed by 1 pound of ground beef or Italian sausage. Cook until browned, breaking it up with a wooden spoon as it cooks. Drain excess grease if needed.
  2. Add 1 chopped onion and 4 minced garlic cloves to the pot. Cook for 2-3 minutes until fragrant and softened.
  3. Pour in 28 ounces of crushed tomatoes, 4 cups of chicken or beef broth, and 1 tablespoon of Italian seasoning. Stir to combine and bring the mixture to a gentle boil.
  4. Break 8 ounces of lasagna noodles into smaller pieces and stir them into the pot. Reduce heat to medium-low and simmer for 15-20 minutes, stirring occasionally, until the pasta is tender.
  5. Add salt and pepper as needed—start with ½ teaspoon of each and adjust based on your preference.
  6. Remove the pot from heat and stir in ½ cup of ricotta cheese for creaminess. Ladle the soup into bowls and top with shredded mozzarella and a sprinkle of parsley or basil.
