  • Salt for boiling water
  • 1 lb ground beef
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 3/4 cup grated Parmesan cheese
  • 1/4 tsp nutmeg (optional)
  • Salt and pepper to taste
  • Chopped fresh parsley (optional garnish)
  • Extra grated Parmesan cheese (optional garnish)

Instructions

  1. Bring a large pot of salted water to a boil and cook the bowtie pasta according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.
  2. Heat olive oil in a skillet over medium heat. Add the ground beef, salt, and pepper, breaking it up with a wooden spoon as it cooks. Cook until browned and fully cooked, about 6-8 minutes. Remove from heat and set aside.
  3. In a medium saucepan, melt the butter over medium-low heat. Add the minced garlic and sauté for about 1 minute until fragrant.
  4. Pour in the heavy cream and stir well. Gradually add the grated Parmesan cheese, stirring constantly to create a smooth, creamy sauce. Sprinkle in the nutmeg if using, and season with salt and pepper to taste.
  5. Add the cooked pasta to the skillet with the beef. Pour the garlic Parmesan sauce over the top and toss everything together gently. If the sauce feels too thick, add a splash of the reserved pasta water to loosen it up.
  6. Transfer to serving plates or a large bowl. Garnish with chopped parsley and extra Parmesan cheese if desired. Serve immediately.
