  • 1 lb Italian sausage (sweet or spicy, casing removed if using links)
  • 1 cup ditalini pasta (or substitute with elbow macaroni or orzo)
  • 4 cups low-sodium chicken broth
  • 1 can (28 oz) crushed tomatoes
  • 1/2 cup freshly grated parmesan cheese (plus extra for garnish)
  • 1 yellow onion, finely diced
  • 2 cloves garlic, minced
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 2 tbsp olive oil
  • 1 tsp Italian seasoning (dried basil, oregano, and thyme)
  • Salt and pepper to taste
  • Fresh parsley (optional, for garnish)

Instructions

  1. Dice the onion, carrots, and celery. Mince the garlic. Remove the casing from the sausage if needed.
  2. Heat olive oil in a large pot over medium heat. Add the sausage and cook until browned, breaking it up with a wooden spoon. Remove and set aside.
  3. In the same pot, add the onion, carrots, and celery. Cook for 5 minutes or until softened. Add garlic and sauté for another minute.
  4. Pour in the chicken broth and crushed tomatoes. Stir in the Italian seasoning, salt, and pepper.
  5. Return the sausage to the pot. Bring the soup to a boil, then reduce heat and let it simmer for 20 minutes.
  6. Add the ditalini pasta to the pot and cook according to package instructions, usually 8-10 minutes.
  7. Stir in the grated parmesan cheese until melted and creamy.
  8. Ladle the soup into bowls and sprinkle with fresh parsley and additional parmesan. Serve hot.
