  • 1 cup (226g) unsalted butter, softened
  • 1 cup (200g) granulated sugar
  • 1 cup (220g) light brown sugar, packed
  • 2 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 2 1/2 cups (315g) all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups (340g) semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Roll out your pie crust and gently press it into a 9-inch pie dish. Trim any excess and crimp the edges for a decorative touch. Set aside.
  3. In a large mixing bowl, cream together the softened butter, granulated sugar, and light brown sugar until smooth and fluffy (about 2-3 minutes). Use an electric mixer for best results.
  4. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  5. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add this dry mixture into the wet ingredients, mixing just until combined. Avoid overmixing!
  6. Fold in the chocolate chips using a spatula or wooden spoon.
  7. Pour the cookie dough mixture into the prepared pie crust, spreading it out evenly.
  8. Bake for 40-45 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
