Soft, buttery, crumbly cookies topped with a streusel that tastes just like coffee cake – perfect for any occasion.

  • 1 cup (226g) unsalted butter, softened
  • 1 cup (200g) granulated sugar
  • 2 large eggs, room temperature
  • 1 tsp vanilla extract
  • 2 ½ cups (315g) all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • ½ cup (100g) brown sugar
  • ½ cup (63g) all-purpose flour
  • ½ tsp cinnamon
  • ¼ cup (56g) unsalted butter, cold and cubed
  • Pinch of salt
  • 1 cup (120g) powdered sugar
  • 23 tbsp milk
  • ½ tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper or silicone mats.
  2. Make the streusel: In a medium bowl, mix together the brown sugar, flour, cinnamon, and salt. Add the cold butter cubes and use a fork (or your fingers) to crumble it into the dry ingredients until it resembles coarse crumbs. Set aside.
  3. Prepare the cookie dough: In a large mixing bowl, cream the softened butter and granulated sugar until light and fluffy – about 2–3 minutes. Add the eggs one at a time, mixing until combined. Stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, mixing just until combined. Be careful not to overmix – this keeps the cookies soft and tender.
  5. Use a cookie scoop or tablespoon to portion out dough onto the prepared baking sheets, spacing them about 2 inches apart.
  6. Top each cookie with a generous spoonful of streusel, pressing it gently into the dough.
  7. Bake for 12–15 minutes, or until the edges are lightly golden. The cookies should be soft, not overbaked!
  8. Let the cookies cool on the baking sheets for 5 minutes, then transfer them to a wire rack to cool completely.
  9. Optional glaze: If desired, mix powdered sugar, milk, and vanilla extract in a small bowl until smooth. Drizzle over cooled cookies.
