  • 1/2 cup honey
  • 3/4 cup packed brown sugar
  • 1 can (8 ounces) pineapple rings, drained (reserve juice)
  • 4 tablespoons unsalted butter, melted
  • 2 tablespoons Dijon mustard
  • 1/2 teaspoon ground cinnamon (optional)
  • 1/4 teaspoon ground cloves (optional)
  • 1/4 cup pineapple juice (from canned pineapple)
  • 1520 whole cloves

Instructions

  1. Preheat oven to 325°F (163°C).
  2. Remove ham from packaging and pat dry. Slice off thick skin if present, leaving fat layer intact.
  3. Score the ham surface with shallow diagonal cuts about 1/4-inch deep in a diamond pattern.
  4. Stud each diamond with a whole clove.
  5. Place ham on a rack in a roasting pan, flat side down. If no rack, use sliced vegetables to elevate.
  6. In a bowl, whisk together honey, brown sugar, melted butter, Dijon mustard, cinnamon, ground cloves, and pineapple juice until smooth.
  7. Brush glaze generously over ham. Tent loosely with foil and roast for 1 hour 30 minutes, basting every 20 minutes with more glaze.
  8. About 30 minutes before done, arrange pineapple rings on top of ham, securing with toothpicks if needed. Brush pineapple with glaze.
  9. Remove foil tent for the last 20 minutes to let glaze caramelize and become sticky and shiny. Watch carefully to prevent burning.
  10. Check internal temperature with instant-read thermometer; it should reach 140°F (60°C). Remove from oven and let rest for 15 minutes before slicing.

Notes

Score the ham lightly to allow glaze penetration without drying out the meat. Baste every 20 minutes to keep ham moist and build flavor layers. Remove foil for the last 20 minutes to caramelize glaze but watch closely to prevent burning. Rest ham for 15 minutes before slicing to redistribute juices. Glaze can be prepared a day ahead and refrigerated. For dairy-free, substitute butter with coconut oil or plant-based margarine. Leftovers keep well refrigerated for 4 days or frozen for up to 3 months.
