These Perfect Pecan Pie Bars combine a buttery shortbread crust, gooey caramel-like filling, and crunchy pecan topping for a dangerously irresistible dessert perfect for gatherings or sweet indulgence.

Ingredients

Scale
  • 1 cup unsalted butter, softened
  • 2 cups all-purpose flour
  • 1/2 cup powdered sugar
  • 1/4 teaspoon salt
  • 3 large eggs
  • 1 cup light corn syrup
  • 1 cup granulated sugar
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 2 cups pecans, roughly chopped

Instructions

  1. Preheat the oven to 350°F (175°C). Line a 9×13-inch pan with parchment paper.
  2. In a mixing bowl, combine softened butter, flour, powdered sugar, and salt. Use a pastry cutter or fork to blend until crumbly. Press the mixture firmly into the bottom of the prepared pan.
  3. Bake the crust for 15 minutes or until lightly golden. Remove from the oven and set aside to cool slightly.
  4. In another bowl, whisk together eggs, corn syrup, granulated sugar, melted butter, and vanilla extract until smooth. Stir in the chopped pecans.
  5. Pour the filling over the baked crust, spreading evenly to cover.
  6. Return the pan to the oven and bake for 30-35 minutes, or until the filling is set and slightly bubbly around the edges.
  7. Allow the bars to cool completely in the pan before slicing. Chill the bars in the refrigerator for about an hour before cutting for clean slices.

Notes

[‘Don’t overmix the crust to keep it tender and buttery.’, ‘Use fresh pecans for the best flavor.’, ‘If your oven runs hot, reduce the temperature slightly to avoid overbaking.’, ‘Let the bars cool completely before slicing to allow the filling to set.’, ‘Use parchment paper for easy removal and cleanup.’]
