Perfect Pecan Pie Bars Recipe with Gooey Caramel Filling

A nostalgic twist on traditional pecan pie with a buttery shortbread crust and gooey caramel filling, perfect for holidays or any sweet craving.

  • 1 cup (125g) all-purpose flour
  • 1/2 cup (115g) unsalted butter, softened
  • 1/4 cup (50g) granulated sugar
  • 1/4 teaspoon salt
  • 3 large eggs
  • 1 cup (200g) packed brown sugar
  • 1/2 cup (120ml) light corn syrup
  • 1/4 cup (60g) unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 2 cups (200g) pecans, roughly chopped
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C). Line your baking pan with parchment paper, leaving some overhang for easy removal.
  2. In a medium mixing bowl, cream together the softened butter, sugar, and salt using an electric mixer until smooth. Add the flour and mix until a crumbly dough forms. Press the dough evenly into the bottom of the prepared pan. Bake for 15 minutes, or until lightly golden. Let it cool slightly.
  3. In a large mixing bowl, whisk together the eggs, brown sugar, corn syrup, melted butter, vanilla extract, and salt until smooth. Fold in the chopped pecans.
  4. Pour the pecan filling over the partially baked crust, spreading it evenly. Use a spatula to smooth out any clumps.
  5. Return the pan to the oven and bake for 30–35 minutes, or until the filling is set but slightly jiggles in the center when gently shaken.
  6. Allow the bars to cool completely in the pan. Once cooled, lift them out using the parchment overhang and cut into squares or rectangles.
