  • 1/2 cup powdered sugar (plus extra for coating)
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 cup finely chopped pecans
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or non-stick baking mats.
  2. In a large mixing bowl, beat the softened butter and powdered sugar together until light and fluffy, about 2-3 minutes.
  3. Mix in the vanilla extract until combined.
  4. Gradually add the flour and salt, mixing until just combined. Be careful not to overmix.
  5. Gently stir in the finely chopped pecans until evenly distributed.
  6. Roll the dough into 1-inch balls and place them on the prepared baking sheets, spaced about an inch apart.
  7. Bake in the preheated oven for 12-15 minutes, or until the bottoms are lightly golden.
  8. Let the cookies cool on the baking sheets for 5 minutes before transferring to a wire rack.
  9. While still warm, gently roll each cookie in powdered sugar. Roll them a second time once completely cooled for an extra snowy look.
