A quick and easy surf and turf recipe featuring juicy steaks and tender lobster tails cooked in a flavorful garlic herb butter, perfect for a cozy dinner for two.

  • 2 ribeye or filet mignon steaks (about 8 oz / 225 g each, room temperature)
  • 2 lobster tails (about 6 oz / 170 g each, fresh or thawed if frozen)
  • Salt and freshly ground black pepper (for seasoning)
  • Olive oil (for searing steaks)
  • 4 tablespoons unsalted butter, softened
  • 3 garlic cloves, finely minced
  • 1 tablespoon fresh parsley, finely chopped
  • 1 teaspoon fresh thyme leaves, chopped
  • 1 teaspoon fresh rosemary, finely chopped
  • 1 teaspoon lemon juice
  • Pinch of salt
  • Freshly ground black pepper to taste
  • Optional: Lemon wedges for serving
  • Optional: A splash of white wine or seafood broth for steaming lobster tails

Instructions

  1. Prepare the Garlic Herb Butter: In a small bowl, combine softened butter with minced garlic, chopped parsley, thyme, rosemary, lemon juice, salt, and pepper. Mix well and set aside at room temperature.
  2. Prep the Lobster Tails: Using kitchen shears, cut down the top shell of each lobster tail and gently pull the meat upward, resting it on top of the shell. Season lightly with salt and pepper.
  3. Season the Steaks: Pat steaks dry and season generously with salt and freshly ground black pepper on both sides. Let rest at room temperature for about 15 minutes.
  4. Heat Your Skillet: Place skillet over medium-high heat. Add a tablespoon of olive oil and heat until shimmering but not smoking.
  5. Sear the Steaks: Place steaks in the hot skillet and sear for 3-4 minutes on each side for medium-rare (internal temp 130°F / 54°C). Remove and tent with foil to rest.
  6. Cook the Lobster Tails: Reduce heat to medium-low. Add a tablespoon of garlic herb butter to the skillet. Place lobster tails shell-side down and spoon melted butter over the meat as it cooks for 5-7 minutes until opaque and firm.
  7. Final Butter Baste: Add remaining garlic herb butter to the pan and baste lobster and steaks for extra flavor and shine.
  8. Serve: Plate steaks and lobster tails, spoon over extra melted garlic herb butter. Garnish with lemon wedges and fresh parsley if desired.

Notes

Let steaks come to room temperature before cooking for even doneness. Watch lobster closely to avoid overcooking; meat should be firm but tender. Garlic herb butter can be made ahead and stored in fridge. For dairy-free, substitute butter with vegan butter or ghee. Optional to steam lobster tails with white wine or seafood broth before basting.
