Instructions

  1. Collect the drippings: Pour the drippings from the roasting pan into a heatproof bowl, let sit, and skim off the fat.
  2. Make the roux: Melt butter in a large saucepan over medium heat, whisk in flour, and stir constantly for 2-3 minutes until golden and smooth.
  3. Add the stock: Slowly pour in chicken or turkey stock, whisking continuously to avoid lumps.
  4. Incorporate the drippings: Add turkey drippings to the saucepan and stir well to combine.
