  • 4 fish fillets (about 6 oz / 170 g each), such as cod or tilapia
  • 1 cup (100 g) panko breadcrumbs
  • 2 tbsp fresh parsley, finely chopped
  • 1 tsp dried oregano
  • 1/2 tsp garlic powder
  • 1/4 cup (25 g) grated Parmesan cheese (optional)
  • 2 tbsp olive oil
  • 1 tsp lemon zest
  • Salt and black pepper to taste
  • Lemon wedges for serving

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a medium bowl, combine panko breadcrumbs, chopped fresh parsley, dried oregano, garlic powder, grated Parmesan (if using), lemon zest, salt, and pepper.
  3. Drizzle olive oil over the breadcrumb mixture and toss until evenly coated and shiny.
  4. Pat the fish fillets dry with paper towels.
  5. Lightly season the fish with salt and pepper on both sides.
  6. Place the fish on a parchment-lined baking sheet.
  7. Spread the breadcrumb mixture evenly over the top of each fillet, pressing gently so it sticks.
  8. Bake for 12 to 15 minutes, depending on thickness, until the fish is opaque and flakes easily and the topping is golden brown and crispy.
  9. For extra crunch, broil for the last 1-2 minutes, watching closely to avoid burning.
  10. Remove from oven and let rest for a couple of minutes.
  11. Serve with lemon wedges.

Notes

Dry the fish well before coating to ensure crispiness. Use panko breadcrumbs for a lighter, crunchier crust. High oven temperature is key for a crispy finish. Broil at the end if extra crunch is desired but watch carefully to avoid burning. For gluten-free, substitute panko with gluten-free panko or crushed nuts. For dairy-free, omit Parmesan or use a plant-based alternative.
