Instructions

  1. Preheat your oven to 375°F (190°C). Line a rimmed baking sheet with parchment paper or aluminum foil. If you have a wire rack, set it on top.
  2. Slice each strip of bacon into thirds (or halves if wider). You should get about 36 pieces.
  3. Wrap each little smokie with a piece of bacon, overlapping the ends slightly. Secure with a toothpick and place seam-side down on the prepared baking sheet or rack.
