Savory Garlic Butter Steak Bites

Juicy, tender steak bites seared to perfection and coated in a rich garlic butter sauce, perfect for quick and flavorful meals.

  • 1 pound sirloin or ribeye steak, cut into 1-inch cubes
  • Salt and pepper, to taste
  • 4 cloves garlic, minced
  • 3 tablespoons unsalted butter, softened
  • 2 tablespoons olive oil
  • 2 tablespoons fresh parsley, chopped
  • Optional: pinch of red pepper flakes

Instructions

  1. Pat the steak cubes dry with paper towels and season generously with salt and pepper on all sides.
  2. Heat a cast iron or heavy skillet over medium-high heat. Add olive oil and swirl to coat the surface. Heat until shimmering but not smoking.
  3. Add steak cubes in a single layer without overcrowding. Cook undisturbed for 2-3 minutes to develop a golden-brown crust. Flip and sear other sides until browned but medium-rare inside, about 2 more minutes. Remove steak bites to a plate and tent with foil to keep warm.
  4. Reduce heat to medium. Add butter to the same pan and let it melt, scraping up browned bits. Stir in minced garlic and cook for about 30 seconds until fragrant but not burnt.
  5. Return steak bites to the pan and toss gently to coat with garlic butter. Sprinkle with chopped parsley and optional red pepper flakes. Cook for another minute to warm through and meld flavors.
  6. Serve immediately, spooning any remaining garlic butter from the pan on top.

Notes

Do not overcrowd the pan to ensure a good sear. Use room temperature steak cubes for even cooking. Add butter after searing to prevent burning. Lower heat if garlic browns too quickly. Let steak rest briefly after searing to keep it juicy.
