  • 2 tablespoons olive oil (extra virgin preferred)
  • 1 tablespoon freshly squeezed lemon juice
  • Salt to taste (kosher salt recommended)
  • Freshly cracked black pepper to taste
  • 1 tablespoon butter (optional, for a silky finish)

Instructions

  1. Pat the chicken breasts dry with paper towels to help achieve a better sear. Season both sides generously with salt and freshly cracked black pepper. Let rest for 5 minutes.
  2. In a small bowl, whisk together 3 tablespoons honey, 2 tablespoons olive oil, 2 tablespoons fresh thyme leaves, minced garlic, and 1 tablespoon lemon juice. Set aside.
  3. Place your skillet over medium-high heat and let it warm for about 2-3 minutes. Add 1 tablespoon olive oil and swirl to coat the pan.
  4. Carefully add the chicken breasts to the hot pan. Let them cook undisturbed for 4-5 minutes until a golden crust forms. Flip and cook the other side for another 4 minutes.
  5. Pour the honey-thyme glaze evenly over the chicken breasts. Reduce the heat to medium-low and let the chicken simmer gently in the glaze. Spoon the sauce over the chicken every couple of minutes.
