  • 1/2 cup honey (preferably local or wildflower)
  • 3/4 cup packed brown sugar (light or dark)
  • 1 can (about 20 ounces) pineapple rings, drained
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 1/2 teaspoon ground cinnamon (optional)
  • Pinch of ground cloves (optional)
  • 1/4 teaspoon freshly cracked ground black pepper

Instructions

  1. Preheat oven to 325°F (163°C).
  2. In a medium saucepan over medium heat, combine honey, brown sugar, 2 tablespoons drained pineapple juice from the can, apple cider vinegar, Dijon mustard, ground cinnamon, cloves, and black pepper. Stir constantly until sugar dissolves and mixture thickens slightly, about 5 minutes. Remove from heat.
  3. If ham is not spiral sliced, score the surface in a diamond pattern about 1/2 inch deep.
  4. Place pineapple rings over the ham, securing with toothpicks if needed.
  5. Place ham on a rack in a large roasting pan, fat side up.
  6. Using a basting brush, generously coat the ham and pineapple with the glaze.
  7. Bake uncovered for about 15 minutes per pound (approximately 1.5 to 2 hours for 6-8 lb ham), basting every 20 minutes with additional glaze.
  8. Check internal temperature with a meat thermometer; it should read 140°F (60°C) when done.
  9. Remove ham from oven and tent loosely with foil. Let rest for 15-20 minutes before slicing and serving.

Use spiral-sliced ham for best glaze absorption. Baste frequently to prevent burning. Rest ham after baking to redistribute juices. Glaze can be prepared a day ahead and warmed before use.
