  • 2 tbsp olive oil (for searing)
  • 1 tsp smoked paprika
  • Salt and freshly ground black pepper, to taste
  • 1 tsp garlic powder
  • 1 lb fresh green beans, trimmed
  • 3 cloves garlic, minced
  • 1 tbsp olive oil or butter
  • Salt and pepper, to taste
  • Pinch of red pepper flakes (optional)
  • 2 cups cooked rice or quinoa
  • 1 tbsp soy sauce or tamari
  • 1 tsp sesame oil (optional)
  • Fresh parsley or green onions, chopped (for garnish)

Instructions

  1. Pat the steak dry with paper towels. Mix smoked paprika, garlic powder, salt, and pepper in a small bowl. Rub seasoning evenly over both sides of the steak. Let rest at room temperature for 10 minutes.
  2. Cook 2 cups of rice or quinoa according to package instructions. Fluff with a fork and keep warm.
  3. Trim and rinse green beans; set aside.
  4. Heat 2 tablespoons olive oil in a large skillet over medium-high heat until shimmering. Place steak strips in a single layer and sear 2-3 minutes per side for medium-rare. Remove steak and tent with foil to rest.
  5. In the same skillet, add 1 tablespoon olive oil or butter and reduce heat to medium. Sauté minced garlic for 30 seconds until fragrant. Add green beans, season with salt, pepper, and optional red pepper flakes. Cook 5-7 minutes until crisp-tender.
  6. Return steak to skillet with green beans to warm through for 1 minute. Drizzle soy sauce and sesame oil over and toss gently.
  7. Divide cooked rice or quinoa between bowls. Top with steak and garlic green bean mixture. Garnish with fresh parsley or green onions.

Notes

Rest steak after cooking to keep it tender. Add a splash of water and cover skillet if green beans cook unevenly. Adjust soy sauce to taste or omit for lighter flavor. Use tamari for gluten-free version. Avoid overcrowding pan to ensure proper sear. Garlic burns quickly, so watch closely.
