  • 2 large sweet potatoes, peeled and cut into 1-inch cubes
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 3 tablespoons honey (raw or local honey preferred)
  • 3 cloves garlic, minced
  • 2 tablespoons soy sauce (low sodium preferred)
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon cornstarch mixed with 1 tablespoon water
  • Optional garnishes: fresh parsley or chives, chopped

Instructions

  1. Preheat oven to 425°F (220°C). Peel and cut sweet potatoes into 1-inch cubes. Toss with 1 tablespoon olive oil, salt, and pepper. Spread evenly on a baking sheet and roast for 25-30 minutes, turning halfway through, until tender and caramelized.
  2. While potatoes roast, heat 1 tablespoon olive oil in a large skillet over medium heat. Add sausage links or crumble loose sausage into the pan. Cook 8-10 minutes, turning occasionally, until browned and cooked through. Remove sausage and set aside, leaving rendered fat in the pan.
  3. Lower heat to medium-low. Add minced garlic to skillet and sauté about 30 seconds until fragrant but not burnt. Stir in honey, soy sauce, and apple cider vinegar. Simmer gently for 2 minutes.
  4. Mix cornstarch with water to make a slurry. Slowly pour into sauce while stirring continuously. Simmer for another minute until sauce thickens to a glossy glaze.
  5. Add cooked sausage and roasted sweet potatoes to skillet with sauce. Toss gently to coat evenly. Cook together 2-3 minutes to marry flavors and warm through.
  6. Remove from heat. Sprinkle with chopped parsley or chives and red pepper flakes if desired. Serve immediately.

Notes

Avoid burning garlic during sauce preparation to prevent bitterness. Drain excess fat from sausage if very fatty to avoid greasiness. Do not overcrowd pan when cooking sausage to ensure proper browning. Stir sauce constantly after adding cornstarch slurry to avoid lumps. Sauce can be made ahead and stored in fridge up to 3 days.
