  • 1 lb ground turkey
  • 2 cups seasoned stuffing mix
  • 2 large eggs, beaten
  • 1/2 cup chicken broth (low sodium preferred)
  • 1/2 cup finely chopped yellow onion
  • 1/2 cup finely chopped celery
  • 3 tbsp chopped fresh parsley (or 1 tbsp dried)
  • 1 tsp dried sage
  • 1/2 tsp dried thyme
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp oil (for sautéing onion and celery)
  • Cranberry sauce (optional, for serving)
  • Gravy (optional, for serving)

Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Heat 1 tbsp oil in a skillet over medium heat. Add chopped onion and celery, stirring frequently. Sauté for about 5 minutes, until softened and fragrant.
  3. In a large bowl, combine ground turkey, stuffing mix, sautéed veggies, parsley, sage, thyme, garlic powder, salt, and pepper.
  4. Add the beaten eggs and chicken broth. Mix everything together until just combined. If the mixture is too dry, add a splash more broth; if too wet, add a bit more stuffing mix.
  5. Scoop out portions (about golf ball size, 1.5 inches diameter) using a cookie scoop or tablespoon. Roll gently between your palms to form balls. You should get about 20 balls.
  6. Arrange the balls on the prepared baking sheet, spacing them about 1 inch apart.
  7. Bake for 20–25 minutes, flipping halfway through, until golden and cooked through (internal temperature should reach 165°F).
  8. Let the stuffing balls cool on a wire rack for 5 minutes before serving.
  9. Serve hot with cranberry sauce or gravy for dipping, if desired.

Notes

For gluten-free, use GF stuffing mix. For dairy-free, use egg substitute if needed. Don’t overmix the turkey mixture for best texture. Chill shaped balls for 10–15 minutes if mixture is loose. Brush with melted butter before baking for extra flavor. Serve hot for best texture. Leftovers can be refrigerated up to 4 days or frozen and reheated in the oven.
