Simple Crockpot Honey Garlic Chicken Recipe with Easy Sesame Green Beans

A cozy and easy slow cooker honey garlic chicken paired with quick sesame green beans, perfect for busy weeknights and comforting meals.

  • 4 boneless, skinless chicken thighs (about 1.5 pounds / 680 grams)
  • 1/3 cup honey (113 grams)
  • 1/4 cup low-sodium soy sauce (60 ml)
  • 3 cloves garlic, minced
  • 2 tablespoons rice vinegar (30 ml)
  • 1 teaspoon sesame oil (5 ml)
  • 1/2 teaspoon ground black pepper
  • 1 tablespoon cornstarch mixed with 2 tablespoons cold water (to thicken sauce later)
  • 1 pound fresh green beans (450 grams), trimmed
  • 1 tablespoon toasted sesame oil (15 ml)
  • 2 teaspoons toasted sesame seeds
  • 2 cloves garlic, thinly sliced
  • 1/2 teaspoon salt, or to taste
  • Optional: a pinch of red pepper flakes

Instructions

  1. In a mixing bowl, whisk together 1/3 cup honey, 1/4 cup soy sauce, minced garlic, 2 tablespoons rice vinegar, 1 teaspoon sesame oil, and 1/2 teaspoon black pepper until fully combined.
  2. Place the 4 boneless, skinless chicken thighs in the slow cooker, spreading them out evenly.
  3. Pour the prepared honey garlic sauce evenly over the chicken, coating each piece. Do not stir.
  4. Cover and cook on low for 4 to 5 hours, or until chicken is tender and reaches an internal temperature of 165°F (74°C).
  5. About 15 minutes before serving, mix 1 tablespoon cornstarch with 2 tablespoons cold water to make a slurry. Stir the slurry into the crockpot, cover, and cook on high for 10-15 minutes to thicken the sauce.
  6. While the chicken finishes cooking, heat 1 tablespoon toasted sesame oil in a large skillet over medium-high heat. Add thinly sliced garlic and sauté for about 30 seconds until fragrant.
  7. Add trimmed green beans and stir-fry for 5-7 minutes until bright green and slightly tender but still crisp. Season with 1/2 teaspoon salt and optional red pepper flakes.
  8. Sprinkle toasted sesame seeds over the green beans and toss before removing from heat.
  9. Serve the honey garlic chicken warm alongside the sesame green beans. Spoon extra sauce from the crockpot over the chicken.

Notes

Use chicken thighs for juicier, more tender meat. If using chicken breasts, reduce slow cooking time to 3-4 hours. For gluten-free, substitute soy sauce with tamari or coconut aminos. Do not add cornstarch slurry too early to avoid gummy sauce. Cook green beans quickly over medium-high heat to keep crispness. Frozen green beans can be used in a pinch. Instant Pot slow cook mode works as an alternative.
