  • 1.5 lbs beef stew meat (well-marbled chuck)
  • 2 tbsp unsalted butter
  • 3 tbsp all-purpose flour
  • 2 cups beef broth (low-sodium)
  • 2 tbsp Worcestershire sauce
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 2 tbsp cornstarch
  • Mashed potatoes (homemade or store-bought)

Instructions

  1. Pat beef stew meat dry and season generously with salt and pepper. Dredge beef pieces in all-purpose flour until lightly coated.
  2. Heat unsalted butter in a large skillet over medium-high heat. Brown beef in batches, about 3-4 minutes per side, until crust forms. Transfer browned beef to slow cooker.
  3. In the same skillet, sauté diced onion for about 3 minutes until translucent. Add minced garlic and cook for 30 seconds until fragrant.
  4. Pour beef broth and Worcestershire sauce into skillet. Scrape up browned bits and bring to a gentle simmer. Pour mixture over beef in slow cooker.
  5. Cover and cook on low for 6-7 hours or on high for 3-4 hours until beef is tender and easily shredded with a fork.
  6. About 30 minutes before serving, mix cornstarch with cold water to create slurry. Stir into slow cooker, turn to high, and cook uncovered for 20-30 minutes until gravy thickens.
  7. Prepare mashed potatoes while gravy thickens. Warm milk and melt butter before mashing. Season with salt and pepper.
  8. Serve beef tips and gravy over mashed potatoes. Garnish with chopped fresh parsley if desired.

Notes

Browning the beef before slow cooking adds flavor and helps the beef hold its shape. Use a cornstarch slurry to thicken gravy and cook uncovered for best consistency. Adjust seasoning before serving. For gluten-free, substitute flour with gluten-free blend or cornstarch and use gluten-free broth. Butter can be replaced with olive oil for dairy-free option.
