  • 2 lbs beef stew meat or chuck roast, cut into 1-inch cubes
  • 4 tbsp unsalted butter, melted
  • 68 fresh garlic cloves, minced
  • 1/2 cup beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp salt
  • 1/2 tsp black pepper, freshly ground
  • 1 tsp dried Italian herbs (optional)
  • 1/4 tsp crushed red pepper flakes (optional)
  • Fresh parsley, chopped, for garnish (optional)

Instructions

  1. Trim excess fat from beef and cut into 1-inch cubes.
  2. Place beef cubes in a large mixing bowl. Sprinkle with salt, black pepper, and dried Italian herbs (if using). Toss to coat evenly.
  3. In a small saucepan, melt butter over medium-low heat. Add minced garlic and cook for 1-2 minutes until fragrant but not browned, stirring constantly. Remove from heat.
  4. Add seasoned beef to the slow cooker. Pour garlic butter over the top. Add beef broth and Worcestershire sauce. Sprinkle in crushed red pepper flakes if desired. Stir to coat beef evenly.
  5. Cover and cook on low for 5-6 hours, or until beef is fork-tender. (Alternatively, cook on high for 2.5-3 hours.)
  6. Stir the beef. Taste and adjust seasoning with extra salt or pepper if needed. For a thicker sauce, remove the lid for the last 30 minutes or whisk in a slurry of 1 tsp arrowroot or cornstarch with 2 tbsp water.
  7. Spoon beef bites onto plates or a platter. Drizzle with garlic butter sauce and garnish with chopped fresh parsley. Serve hot.

Notes

For extra flavor, sear beef cubes in a hot skillet before slow cooking. Use ghee or vegan butter for dairy-free. To thicken sauce, remove lid for last 30 minutes or add a cornstarch/arrowroot slurry. Store leftovers in the fridge up to 4 days or freeze up to 3 months. Serve over cauliflower mash, zucchini noodles, or with roasted veggies.
