  • 1.5 pounds baby potatoes, halved or quartered if large (red or gold potatoes preferred)
  • 1/2 cup unsalted butter, melted
  • 68 fresh garlic cloves, minced
  • 1/2 cup beef broth
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon salt (plus more to taste)
  • 1/2 teaspoon black pepper (plus more to taste)
  • 1 teaspoon Italian seasoning (or a blend of dried thyme, rosemary, and parsley)
  • 1/2 teaspoon smoked paprika (optional)
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Pat beef stew meat dry with paper towels and cut into bite-sized pieces if needed. Toss with salt, pepper, and Italian seasoning to coat evenly.
  2. Heat a large skillet over medium-high heat. Add 1 tablespoon of the butter. Sear half the beef in a single layer for 1–2 minutes per side until browned. Transfer to slow cooker and repeat with remaining beef.
  3. Lower skillet heat to medium. Add remaining butter and minced garlic. Sauté for 30–60 seconds until fragrant, being careful not to brown the garlic.
  4. Place seared beef in the bottom of the slow cooker. Scatter baby potatoes on top. Pour garlic butter evenly over everything.
  5. Add beef broth and Worcestershire sauce to the slow cooker. Sprinkle with smoked paprika if using. Gently toss to coat.
  6. Cover and cook on low for 6–7 hours or on high for 3–4 hours, until beef is tender and potatoes are fork-tender.
  7. Taste and adjust salt and pepper as needed. For a crispier finish, transfer beef and potatoes to a baking sheet and broil for 3–5 minutes until golden (optional).
  8. Garnish with fresh chopped parsley before serving.

Notes

For best flavor, sear the beef before slow cooking and sauté the garlic in butter. You can prep everything the night before and refrigerate until ready to cook. For a dairy-free version, use vegan butter or olive oil. To make it low-carb, substitute potatoes with cauliflower florets (add halfway through cooking). Broil at the end for a crispy finish.
