Ingredients

Scale
  • 2 lbs boneless, skinless chicken breasts
  • 1 cup BBQ sauce (your favorite brand)
  • 1/3 cup honey
  • 4 cloves garlic, minced
  • 2 tablespoons soy sauce (or tamari/coconut aminos for gluten-free)
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt (or to taste)
  • 1/2 teaspoon black pepper (or to taste)
  • 12 small slider buns (brioche, potato, Hawaiian, or mini ciabatta)
  • Optional toppings: coleslaw, dill pickle slices, thinly sliced red onion, extra BBQ sauce, jalapeño slices

Instructions

  1. In a medium mixing bowl, whisk together BBQ sauce, honey, minced garlic, soy sauce, apple cider vinegar, smoked paprika, salt, and pepper. Taste and adjust seasoning if desired.
  2. Place chicken breasts in the slow cooker. Pour the sauce over the chicken, turning to coat each piece.
  3. Cover and cook on low for 4–6 hours or high for 2–3 hours, until the chicken shreds easily and reaches 165°F internally.
  4. Remove chicken to a plate or cutting board and shred with two forks or tongs.
  5. If the sauce is too thin, turn the slow cooker to high and simmer uncovered for 10–15 minutes, or stir in a cornstarch slurry (1 tablespoon cornstarch + 2 tablespoons water) to thicken.
  6. Return shredded chicken to the slow cooker and stir to coat in the sauce. Let rest on warm for at least 10 minutes.
  7. Split and lightly toast slider buns if desired. Pile chicken onto each bun and top with coleslaw, pickles, onions, extra BBQ sauce, or jalapeños as desired.
  8. Serve immediately while warm. Leftovers can be stored in the fridge or freezer.

Notes

For extra flavor, marinate the chicken in the sauce overnight before cooking. Use chicken thighs for a juicier result. To keep buns from getting soggy, toast them and assemble sliders just before serving. The pulled chicken can be kept warm in the slow cooker for up to 2 hours. For a gluten-free version, use gluten-free BBQ sauce, tamari, and buns. The recipe is naturally dairy-free.
