  • 1/2 cup breadcrumbs (plain or seasoned)
  • 1 large egg
  • 1/4 cup onion, finely diced
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 cups beef broth
  • 2 tbsp Worcestershire sauce
  • 1 cup mushrooms, sliced (optional)
  • 1 packet onion soup mix
  • 2 tbsp cornstarch

Instructions

  1. In a large mixing bowl, combine the ground beef, breadcrumbs, egg, onion, garlic powder, salt, and pepper. Mix gently until well incorporated.
  2. Roll the mixture into small balls, about 1 to 1.5 inches in diameter (approximately 20-24 meatballs).
  3. Optional: Heat a skillet over medium-high heat and brown the meatballs on all sides for added flavor.
  4. In a separate bowl, whisk together the beef broth, Worcestershire sauce, onion soup mix, and cornstarch until smooth.
  5. Add the mushrooms (if using) to the bottom of the slow cooker. Place the meatballs on top, then pour the gravy mixture evenly over them.
  6. Set the slow cooker to low and cook for 6-8 hours, or high for 3-4 hours, until the meatballs are tender and the gravy thickened.
  7. Stir gently to combine, then serve hot over mashed potatoes, rice, or egg noodles.

Notes

Browning the meatballs adds extra flavor but can be skipped for a softer texture. Adjust the gravy thickness by adding more cornstarch mixed with cold water if needed.
