Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone mats and set aside.
  2. Whisk together dry ingredients: sift or whisk 2 ½ cups all-purpose flour, 1 teaspoon baking powder, ½ teaspoon baking soda, and ¼ teaspoon salt in a large bowl.
  3. Cream butter and cream cheese: Using an electric mixer, beat ½ cup softened unsalted butter and 4 ounces softened cream cheese until smooth and creamy, about 2-3 minutes.
  4. Add sugars: Gradually add ¾ cup granulated sugar and ¼ cup packed light brown sugar. Beat until pale and fluffy, about 3-4 minutes.
  5. Incorporate egg, vanilla, lemon zest, and juice: Beat in 1 large egg, 1 teaspoon pure vanilla extract, 2 tablespoons fresh lemon zest, and 2 tablespoons fresh lemon juice.
  6. Combine wet and dry: Slowly add the dry flour mixture to the wet ingredients in two additions, mixing on low speed until just combined. Avoid overmixing.
  7. Fold in candied lemon pieces: Gently fold in ½ cup chopped zesty candied lemon pieces with a spatula.
  8. Scoop the dough: Using a cookie scoop or tablespoon, drop dough balls about 2 inches apart on prepared baking sheets (1.5-tablespoon scoop recommended).
