  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1 cup canned black beans, drained and rinsed
  • 1 cup canned corn, drained (fire-roasted optional)
  • 1 cup diced tomatoes with green chilies
  • 2 tablespoons jalapeños, finely diced (adjust to taste)
  • 2 tablespoons cilantro, chopped
  • 1 tablespoon Southwest seasoning (chili powder, cumin, smoked paprika, garlic powder, onion powder)
  • 1 tablespoon lime juice, freshly squeezed
  • Tortilla chips for serving

Instructions

  1. In a large mixing bowl, combine the softened cream cheese and sour cream. Mix until smooth and creamy.
  2. Add the shredded cheddar cheese and stir until evenly incorporated.
  3. Fold in the black beans, corn, diced tomatoes with green chilies, jalapeños, and cilantro. Mix gently to avoid smashing the beans.
  4. Sprinkle in the Southwest seasoning and squeeze in the lime juice. Stir until the spices are evenly distributed.
  5. Transfer the dip to your serving dish, spreading it out evenly.
  6. If serving warm, heat the dip in a preheated oven at 350°F (175°C) for 10-15 minutes until bubbly. If serving chilled, cover and refrigerate for at least 30 minutes to let the flavors meld.
  7. Garnish with extra cilantro, jalapeño slices, or a sprinkle of cheese before serving.
  8. Serve with tortilla chips, veggie sticks, or crackers, and enjoy!

Notes

You can adjust the spice level by reducing jalapeños or Southwest seasoning. For a lighter option, use Greek yogurt instead of sour cream. The dip can be made ahead and refrigerated overnight for deeper flavors.
