  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 2 garlic cloves, minced
  • 1 teaspoon grated ginger
  • Pinch of chili flakes
  • 1 tablespoon vegetable oil
  • 2 cups jasmine rice, cooked
  • 1 cup broccoli florets
  • 1 bell pepper, sliced
  • Snap peas (optional)
  • Sesame seeds (optional, for garnish)
  • Green onions, thinly sliced (for garnish)

Instructions

  1. In a mixing bowl, whisk together soy sauce, honey, rice vinegar, minced garlic, grated ginger, and chili flakes. Set aside.
  2. Prepare jasmine rice according to package instructions. Fluff with a fork and keep warm.
  3. Cut chicken thighs into bite-sized pieces and season lightly with salt and pepper.
  4. Heat vegetable oil in a large skillet over medium-high heat. Add chicken and sear for 3-4 minutes per side until golden brown and cooked through.
  5. Reduce heat to medium and pour the prepared sauce over the chicken. Toss to coat and let it simmer for 2-3 minutes until the sauce thickens and becomes sticky.
  6. Steam or sauté broccoli florets, bell pepper slices, or snap peas while the chicken cooks.
  7. Divide cooked rice into bowls, top with sticky chicken, and add veggies on the side. Garnish with sesame seeds and green onions.
