Instructions

  1. Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper.
  2. Separate the eggs, placing yolks in one bowl and whites in another. Ensure no yolk gets into the whites.
  3. To the yolks, add softened cream cheese, sugar, cornstarch, strawberry jam, vanilla extract, and a pinch of salt. Whisk until completely smooth.
  4. Using clean beaters, whip the egg whites on high until stiff peaks form (about 3-5 minutes).
  5. Scoop about one-third of the whipped egg whites into the yolk mixture and stir gently to lighten the batter. Carefully fold in the remaining whites in two batches using a spatula.
  6. Mound the batter onto the prepared baking sheet, forming one large loaf or several small rounds. Smooth the top.
  7. Dollop extra strawberry jam on top and swirl with a butter knife or toothpick for a marbled effect.
  8. Bake for 25-30 minutes, until golden and just set. The bread should feel firm but springy.
  9. Let cool on the baking sheet for 5-10 minutes before lifting gently with a spatula.
  10. Slice and serve warm, dusted with powdered sugar and topped with fresh strawberries or whipped cream if desired.
