Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with oil.
  2. Wash and peel 2-3 medium-sized sweet potatoes. Slice them into ¼-inch thick rounds using a sharp knife or a mandoline for consistency.
  3. Arrange the sweet potato slices in a single layer on the prepared baking sheet. Brush both sides lightly with olive oil and sprinkle with a pinch of salt and pepper.
  4. Bake the sweet potato rounds in the preheated oven for 15-20 minutes, flipping them halfway through. They should be tender with slightly crisp edges.
  5. While the sweet potatoes are roasting, slice the brie into small pieces, about the size of your sweet potato rounds.
  6. Once the sweet potatoes are out of the oven, place a piece of brie on each round. Return the baking sheet to the oven for 2-3 minutes, just until the brie melts.
  7. Remove the sweet potato rounds from the oven and let them cool for a minute. Spoon a small dollop of cranberry sauce onto each round.
