  • ½ cup (60 g) powdered sugar (crust)
  • ¼ teaspoon salt
  • ¾ cup (170 g) unsalted butter, cold and cubed
  • 4 large eggs, room temperature
  • 1 ½ cups (300 g) granulated sugar
  • ⅔ cup (160 ml) fresh lemon juice (about 34 lemons)
  • 1 tablespoon lemon zest, finely grated
  • ⅓ cup (40 g) all-purpose flour (filling)
  • Powdered sugar for dusting

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch pan with parchment paper, leaving overhang for easy removal.
  2. In a bowl, whisk together 1 ½ cups flour, ½ cup powdered sugar, and ¼ teaspoon salt. Add cold cubed butter and work into dry ingredients until mixture resembles coarse crumbs with some pea-sized pieces. Press evenly into the pan.
  3. Bake crust for 18–20 minutes until edges turn golden. Remove and let cool slightly.
  4. In a medium bowl, whisk 4 eggs and 1 ½ cups granulated sugar until light and frothy. Stir in lemon juice and zest. Add ⅓ cup flour and whisk until smooth.
  5. Pour filling over warm crust and bake for 20–25 minutes until filling is set but slightly jiggly in center.
  6. Cool completely on a wire rack. Lift bars out using parchment paper and dust generously with powdered sugar before slicing.

Notes

Use cold butter for the crust to ensure flakiness. Do not overmix the crust to keep pea-sized butter pieces. Fresh lemon juice and zest provide the best flavor. Chill bars before slicing for cleaner cuts. Dust powdered sugar just before serving to avoid melting.
