A tender and juicy chicken breast stuffed with fresh asparagus and finished with a flavorful herb butter glaze. This recipe is quick, easy, and perfect for cozy weeknight dinners or special occasions.

  • 4 boneless, skinless chicken breasts (about 6 oz / 170 g each), pounded slightly to even thickness
  • 1 bunch fresh asparagus (about 12 spears), trimmed and blanched
  • 4 tablespoons unsalted butter, softened
  • 1 tablespoon finely chopped fresh parsley
  • 1 tablespoon finely chopped fresh thyme
  • 1 tablespoon finely chopped fresh chives
  • 2 cloves garlic, minced
  • Zest of 1 lemon
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons olive oil

Instructions

  1. Trim the woody ends off the asparagus spears and blanch them in boiling water for 2 minutes, then immediately transfer to ice water to stop cooking. Drain and pat dry.
  2. Lay each chicken breast flat on a cutting board. Using a sharp knife, slice horizontally through the middle to create a pocket, being careful not to cut all the way through. Gently pound the chicken to even out thickness if needed.
  3. Lay 3 asparagus spears inside each pocket, season lightly with salt and pepper, and close the pocket by folding the chicken over the asparagus. Secure with toothpicks if needed.
  4. In a small bowl, combine softened butter, minced garlic, chopped parsley, thyme, chives, and lemon zest. Mix well and season with salt and pepper.
  5. Heat olive oil in an oven-safe skillet over medium-high heat. Add the stuffed chicken breasts and cook for about 3 minutes on each side until golden brown.
  6. Preheat oven to 375°F (190°C). Spread half of the herb butter glaze over the seared chicken breasts. Transfer the skillet to the oven and roast for 15-18 minutes until chicken reaches an internal temperature of 165°F (74°C).
  7. Remove chicken from oven and brush with remaining herb butter glaze. Let rest for 5 minutes before slicing and serving.

Notes

If you don’t have an oven-safe skillet, transfer the chicken to a baking dish after searing and then add the butter glaze before roasting. Use a meat thermometer to ensure chicken reaches 165°F (74°C) for juiciness. Blanch asparagus to keep it crisp. For dairy-free option, substitute butter with plant-based butter. Variations include adding cheese or swapping asparagus with zucchini or bell peppers.
