  • 2 pounds flank steak or sirloin, thinly sliced against the grain
  • 4 cups fresh broccoli florets
  • ½ cup low-sodium soy sauce
  • ¼ cup beef broth or water
  • ¼ cup brown sugar
  • 3 cloves garlic, minced
  • 1 tablespoon grated fresh ginger
  • 2 tablespoons cornstarch
  • 2 tablespoons cold water
  • 1 tablespoon toasted sesame oil
  • Optional garnishes: sesame seeds, thinly sliced green onions

Instructions

  1. Slice 2 pounds of flank steak thinly against the grain and set aside.
  2. In a medium bowl, whisk together ½ cup soy sauce, ¼ cup beef broth, ¼ cup brown sugar, 3 minced garlic cloves, and 1 tablespoon grated fresh ginger until sugar dissolves.
  3. Place the sliced beef in the slow cooker and pour the sauce over the top, coating all pieces.
  4. Cover and cook on low for 6-8 hours or on high for 3-4 hours until beef is fork-tender.
  5. About 30 minutes before serving, steam or blanch 4 cups broccoli florets until tender but still crisp. Drain well.
  6. Mix 2 tablespoons cornstarch with 2 tablespoons cold water until smooth. Stir this slurry into the crockpot and cook on high for another 15-20 minutes to thicken the sauce.
  7. Gently fold the cooked broccoli into the crockpot and stir carefully to coat with sauce.
  8. Drizzle 1 tablespoon toasted sesame oil over the top and stir gently.
  9. Garnish with sesame seeds and sliced green onions if desired. Serve hot over steamed white or brown rice.

Notes

Slice beef thinly against the grain for tenderness. Add broccoli near the end to keep it crisp and vibrant. Use fresh garlic and ginger for best flavor. If sauce is too thin after thickening, cook uncovered a bit longer to reduce. For gluten-free, substitute soy sauce with tamari or coconut aminos. Can be frozen without broccoli for up to 3 months.
