These soft, tender, and slightly nostalgic pink sugar cookies replicate the famous Crumbl texture with a homemade touch. They feature a buttery richness and a sweet sugar crunch on the outside, perfect for celebrations or everyday treats.

Ingredients

Scale
  • 2 ¾ cups (345g) all-purpose flour
  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup (227g) unsalted butter, softened
  • 1 ⅓ cups (270g) granulated sugar, divided
  • 2 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • ¼ cup (55g) pink sanding sugar

Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone mats.
  2. In a medium bowl, whisk together 2 ¾ cups all-purpose flour, 1 ½ teaspoons baking powder, ½ teaspoon baking soda, and ½ teaspoon salt. Set aside.
  3. In a large bowl, use an electric mixer to beat 1 cup softened unsalted butter with 1 cup granulated sugar until light and fluffy, about 3-4 minutes.
  4. Beat in 2 large eggs, one at a time, then stir in 2 teaspoons pure vanilla extract until smooth and glossy.
  5. Gradually mix the flour mixture into the wet ingredients in batches, stirring gently until just combined. Avoid overmixing.
  6. Cover the dough with plastic wrap and refrigerate for at least 30 minutes (up to 2 hours).
  7. Use a cookie scoop or tablespoon to portion dough (about 1 ½ tablespoons or 20g each). Roll each ball lightly in the remaining ⅓ cup granulated sugar or pink sanding sugar until coated. Place on prepared baking sheets about 2 inches apart.
  8. Bake for 9-11 minutes or until edges are set but centers still look slightly soft. Cookies will firm up as they cool.
  9. Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

Use softened butter, not melted, to prevent spreading. Chilling the dough is essential for tender texture and shape retention. Avoid overmixing after adding dry ingredients. Check cookies early to avoid overbaking; they firm up while cooling. Pink sanding sugar adds a signature sparkle and crunch but can be substituted with granulated sugar colored with food coloring.
