Ingredients

Scale
  • 3 medium-sized ripe bananas, mashed
  • 1/2 cup (115g) unsalted butter, melted and slightly cooled
  • 3/4 cup (150g) granulated sugar
  • 2 large eggs, at room temperature
  • 1 teaspoon vanilla extract
  • 1/2 cup (120g) sour cream or plain Greek yogurt
  • 1 3/4 cups (220g) all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • Optional: 1/2 cup chopped walnuts or pecans
  • Optional: 1/2 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan with butter or non-stick spray.
  2. Peel and mash the ripe bananas in a large mixing bowl using a fork or whisk until smooth.
  3. Add the melted butter, sugar, eggs, vanilla extract, and sour cream to the mashed bananas. Whisk until well combined.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Gradually fold the dry mixture into the wet mixture using a spatula. Be gentle to avoid overmixing.
  6. If using nuts or chocolate chips, fold them in at this stage.
  7. Transfer the batter into the prepared loaf pan, spreading it evenly.
  8. Bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the bread cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
