  • 8 ounces Velveeta cheese, cut into cubes
  • 2 cups cooked chicken, shredded or diced
  • 1 cup heavy cream
  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Optional: Fresh parsley for garnish

Instructions

  1. Bring a large pot of salted water to a boil. Add rotini and cook according to package instructions until al dente. Drain and set aside.
  2. In a skillet over medium heat, melt the butter. Add minced garlic and sauté for 1-2 minutes until fragrant, but don’t let it brown.
  3. Pour in the heavy cream and stir well. Let it simmer gently for 3-4 minutes, stirring occasionally.
  4. Stir in the Parmesan cheese until melted, then add the Velveeta cubes. Keep stirring until Velveeta is fully melted and the sauce is smooth.
  5. Add salt and pepper to taste. Adjust seasoning as necessary.
  6. Add the shredded chicken to the sauce and stir well to coat. Then toss in the cooked rotini pasta and stir until everything is evenly combined.
  7. Transfer to a serving dish, sprinkle with fresh parsley if desired, and serve hot.

Notes

Be sure to stir the Velveeta frequently to prevent it from sticking to the skillet. Taste the sauce before adding salt, as Velveeta and Parmesan are naturally salty.
