  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tbsp fresh lemon juice
  • 1 tbsp lemon zest
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 cup breadcrumbs
  • Optional garnish: fresh parsley or extra lemon slices

Instructions

  1. In a large bowl, combine chicken pieces, lemon juice, lemon zest, olive oil, garlic powder, salt, and pepper. Mix well to coat the chicken evenly. Cover and marinate for 15 minutes.
  2. In another bowl, add breadcrumbs and lightly season with salt and pepper if desired.
  3. Remove marinated chicken from the bowl and toss each piece in breadcrumbs, pressing gently to ensure an even coating.
  4. Preheat the air fryer to 375°F (190°C) for about 3 minutes.
  5. Place coated chicken pieces in a single layer in the air fryer basket. Cook for 10-12 minutes, flipping halfway through, until golden brown and crispy.
  6. Transfer cooked chicken bites to a serving platter and garnish with fresh parsley and lemon slices.

Notes

For extra crispiness, spray a light mist of cooking oil over the chicken bites before air frying. Work in batches to avoid overcrowding the air fryer basket.
